I do believe that meals/drinks are catered prior to the shows - possibly as per specifications laid out for each band member and there may be things afterwards at the hotel where they are staying. I bet there is a list of requirements but it is nothing extraordinary or extravagant like some artists demand.
Jimmy Buffett has a huge number of people so there are a lot of diverse requirements. A Lightfoot tour has less than 20 people probably.
Leaving all of it up to the venue would be crazy!
At least people don't have to count smarties and remove the blue ones - one artist has this in her demands. Can't remember who tho...sheesh....
or provide black athletic socks and postcards with stamps for sheryl crow...good grief...
